Olive Oil Guacamole

Ingredients

- 3 medium ripe avocados
1/4 cup finely chopped red onion
1/2 jalapeño pepper, minced (more or less, to taste)
1/4 cup chopped cilantro leaves and upper stems
pinch or two of coarse salt
2 Tbsp. Persian Lime Agrumato Olive Oil
- 3 medium ripe avocados
Directions
1- Cut the avocados in half and remove the pit.
2- Spoon the flesh of the avocados into a Mortar and Pestle,
or mixing bowl.
3- Add the onion, jalapeño, cilantro and salt, and combine.
4- Add the Persian Lime Agrumato Olive Oil and stir
gently, so as not to crush the ingredients too aggressively.
Serve with tortilla chips or on top of your favorite
Mexican dish.
